Pink Bourbon

One of the Rave Coffee mainstays is our El Carmen coffee. This is produced by a group of smallholders in Huila, one of whom is William Cruz. He is one of the youngest producers in the group, and his naturally processed lot is exclusive to us at Rave! Processing this quality of varietal and fermentation level is a risk for farmers - unique flavours can be revealed, but this needs to be carefully balanced with the more boozey characteristics brought by the fermentation itself. The farm, Finca Jericó, covers around 6 hectares and includes the usual varietals of Castillo and Colombia as well as Pink Bourbon, Pacamara and Gesha. Around 4,500 of William’s trees are now Pink Bourbon, a cultivar that is experiencing a popularity with Baristas at competition level. The heritage of Pink Bourbon is unknown, but anecdotally it was originally found in Colombia, and is a descendant of an heirloom Ethiopian varietal. It’s popularity grew initially when it was found to be resistant to certain coffee pests. It is also fairly high yielding, which is unusual amongst the more complex quality varieties, so presents a really sustainable option for farmers looking for a viable transition into the super high-end coffee market. Once fully ripened, cherries were hand-picked, and then fermented for 72 hours in a sealed environment. These cherries were then dried on raised beds, and finished by drying under a shaded canopy for 22 days. The coffee has a high natural sweetness, which lends it well to natural processing and light roasting.
