We are thrilled to launch this decaffeinated Guatemalan coffee from Coffee Bird - a family business specialising in quality sourcing and exports. This lot is compromised mostly from Finca San Jeronimo, a 4th generation coffee farm in Atitlán along with El Zapote, Gascon, Santa Irene & San Jorge. Together, they are decaffeinated using the Sugarcane process.

 

This method is prized for retaining the the original coffee flavour, and the result is a complex, sweet and accessible coffee.

The farms that contribute to this decaffeinated lot are San Jeronimo, El Zapote, Gascon, Santa Irene and San Jorge. Together, they represent some of the finest coffee producers in Guatemala, each of whom also sells exceptional caffeinated lots. San Jeronimo is the largest of the group, producing around 70% of the total lot.

Coffee production at Finca San Jeronimo is managed by fourth-generation sibling farmers, Giorgio and Gina. Situated on the slopes of the Atitlán volcano, the farm also grows exotic fruits and hardwood trees, alongside honey, cheese and cattle as alternative revenue streams.

The varietals in this lot are Bourbon, Caturra and Catuai. All three share the same lineage, with Caturra a natural mutation of Bourbon, and Catuai a deliberate cross between Caturra and Mundo Novo as part of a breeding programme. There is also a small amount of Gesha present which, unlike the other three varietals, adds a floral-citrus note.

In combination, these producers and their coffees, together with the style of decaffeination, have created a coffee that can stand up against its caffeinated counterparts. Its synergy with milk, and suitability for espresso, make this coffee an all-day delight!
