Honduras has been traditional thought of as a producer of nutty, chocolatey balanced ‘blender’ coffees. But farms like Valentina are looking to the changing tastes of the speciality market and producing more refined, complex flavour profiles.
This honey processed lot is de-pulped and dry fermented for 2-3 days before sun drying for 12-15 days. The result is a fruit sweetness reminiscent of red grape, and still with more typical characteristics of milk chocolate and treacle.

Known as Chollo, Carlos is an engineer and the driving force behind the operations of CONEXH. Founded in 2021, CONEXH was established with the vision of becoming a reliable ally for both coffee producers and international buyers at origin, with a strong emphasis on quality control and traceability. It’s a five-generation family business dedicated to coffee production, owning ten farms in the iconic Montecillos Sierra.
The farm spans 25 hectares and is home to roughly 90,000 coffee trees, situated at an altitude of around 1,600 masl. It produces approximately 880 bags of coffee annually. In addition to coffee, the farm also grows a wide variety of citrus fruits and Japanese plums, which provide natural shade for the coffee plants.
This coffee is processed using the traditional sun-drying method. The freshly picked cherries are pulped and dry-fermented with the mucilage still intact for 2 - 3 days before sun drying for 12 - 15 days.
