This lot was selected for its unique flavour profile - a truly WOW coffee with notes of honeyed elderflower, fruity peach, citrusy grapefruit and a boozy finish. The advanced natural processing refers to the sequence of drying, fermenting, re-soaking and resting of the ripe coffee cherries, and the result is boundary-pushing and extremely impressive!

For our third release in this journey, we return to Colombia, to a small farm in Huila called Quebraditas, owned by Edinson Argote and his family, who are committed to quality and innovation in coffee production. After a difficult childhood and the loss of his mother at the age of three, Edinson was raised by his sister. At 11 he left home to work in different places before joining the army at 18. His introduction to coffee came at 20 while working with his cousin at a coffee buying station in Acevedo, Huila, where alongside physical work he developed a deep interest in coffee through cupping and sensory training. This passion led him to gain experience on innovative farms in the Cauca region, eventually becoming Head of Quality and Processing Control, while carrying the ambition to one day establish his own farm.

Today that dream is Quebraditas, a family project producing specialty coffees with distinctive and replicable sensory profiles through experimental fermentation methods such as thermal shock and yeast inoculation. While the farm still grows classic varieties like Caturra and Colombia, Edinson is increasingly planting exotic cultivars including Gesha, Sidra, Ombligón, Eugenoids, Chiroso, and Laurina, supported by agronomic practices focused on soil health, shading, organic matter, and pH balance. This lot is crafted through a carefully designed multi-stage process: ripe cherries are harvested, floated, and fermented for 60 hours before drying for nearly 12 days. The beans are then rehydrated with hot water for a second 96-hour fermentation with selected yeast and mosto kept below 25°C, followed by controlled drying and a final resting period in GrainPro bags—resulting in a cup that is as meticulously crafted as it is unforgettable.
