The coffee is in many ways typical of Mexican coffee, sweet, round and full bodied - but each year we find new elements to the coffee, and this year it it’s truly exceptional sweetness.

The producers of Union San Pedro produce low yields on small farms - leaving space for canopy trees, and other subsistence crops. This biodiverse approach improves soil health, wildlife habitat and even coffee quality! This full medium/dark roast highlights the natural sweetness of the cherries grown here - and makes a full bodied, intense yet refined cup of coffee.

The producers of Yoloxochitlán tend to their coffee trees on remote and inaccessible hillsides! But the coffee cherries mature slowly and sweetly here, and the results in the cup are impressively complex. This coffee is roasted to a medium/light level and highlights the fresh fruit flavour and delicate floral sweetness.
