This natural processed Honduran coffee is super sweet with a balanced fruit flavour and floral aromatics.

 

This is not typical of the region, better known for mild nutty coffees, and is therefore testament to the impact of the speciality sector and changing tastes towards natural processing.

Honduras has been traditionally thought of as a producer of nutty, chocolatey balanced ‘blender’ coffees. But farms like El Chollo are looking to the changing tastes of the speciality market and producing more refined, complex flavour profiles. This natural is sun dried for 12-15 days. The result is a floral fruit sweetness reminiscent baked plum pudding, pomegranate and honeycomb.

This coffee is produced by Carlos Meija who not only owns the farm, but also the exporting company that him and his family set up in 2021 - CONEXH SA. The Meija family have been working in coffee production for five generations and own 10 farms between them in the Montecillos Sierra region. Over the last 3 years, a further 40 neighbouring producers have joined their co-operative business model.
