Finca San Carlos is a family-owned coffee farm tucked in the Balsamo mountains of El Salvador. With over 500 years of experience, the Borgonovo family grows a variety of beans (including Bourbon, Pacas, Catuai Rojo, Caturra, Marsellesa, and Centroamericano) which thrive in the region’s rich volcanic soil.

Sustainability guides every step of the process. The farm carefully manages soil, fertilisation, and certifications to ensure healthy crops and responsible farming. After harvest, beans are fermented for 6–8 hours and dried on traditional clay brick patios, bringing out their unique flavours. During harvest season, only the ripest beans are hand-selected and sent to the mill for processing. Finca San Carlos uses a mix of techniques, fully washed, semi-washed, and natural brick patio methods, choosing what works best for each coffee.

Beyond coffee, the Borgonovo family supports their community with modern housing, eco friendly stoves, education and health initiatives, earning recognition through the “Marca Positiva” award for their work in Talnique.
