Pink Bourbon
The name Villamaría refers to the area of Caldas, Colombia. The producers here will deliver their ripe coffee cherries to La Aurora, a farm run by Rubiel Orrego, where they are washed and processed.
This method is unusual in Colombia, where most producers conduct their own processing, but it is having great success here. Producers can be paid at point of harvest, rather than waiting to find a buyer for the dried and processed product.
As the pink bourbon varietal is harder to grow, and can be lower yeilding, combining lots from neighbouring farms and processing them together creates larger lot sizes and better consistency of flavour.
Pink bourbon’s are gaining in popularity for their distinctive fruity sweetness and complexity. The cherries have a pink hue, hence the name, but have been recently found to not be a descendent of the bourbon varietal at all! Research is ongoing into the true origin of this coffee type.
