El Fénix, situated in Quindío, Colombia, is a hub for experimental processing and the farming of high quality coffee varietals. This coffee is bright, floral and has sweet tropical fruit notes. The Anoxic Natural process was designed by the producer, Miguel, in an effort to develop a complex flavour profile that would be long-lasting and accessible to remote farms. The coffee is harvested and placed into a low oxygen environment in which to ferment.

El Fénix is a unique experimental farm focused on rare coffee varietals and innovative processing. Developed with our export partner, Raw Material, it serves as both a research hub and a resource for global coffee producers.

This lot uses the ‘Anoxic Natural’ method, pioneered by farm manager Miguel. Ripe cherries ferment in oxygen-deprived tanks, sealed with cool water for slow, controlled fermentation. They then dry whole for up to five weeks on shaded beds before the fruit skin is removed.

Beyond its own crops, El Fénix processes cherries from neighboring farms, offering a two-tiered payment system based on quality.
