Following the devastating 7.4-magnitude earthquake in western Colombia, £1 from each bag of this coffee sold will be donated to World Central Kitchen, supporting its work providing fresh meals and water to displaced families, first responders and communities affected by the disaster.

 

This exceptional lot from Nestor Lasso is a great example of the boundaries being pushed in coffee processing. The light roast profile preserves all the floral notes of this single origin, with sweet vanilla, creamy jasmine and vibrant passion fruit.

 

In the cup, the result is a beautifully delicate pour-over.

This coffee's distinctive character is no accident. From the unique terroir of Huila to the producers' expertise in varietal selection and processing, every step has been carefully considered to create an exceptional cup. Finca El Diviso sits in the municipality of Pitalito, southern Huila, Colombia, at 1,750 metres above sea level. Its mild climate and nutrient-rich volcanic soils provide ideal conditions for producing outstanding coffee.

Five years ago, brothers Nestor and Adrián Lasso transformed their family farm into a centre for innovation, partnering with Jhoan Vergara to push the boundaries of coffee processing. Working alongside Cata Exports, they have developed cutting-edge fermentation techniques that have earned international recognition and helped redefine perceptions of Colombian coffee. Raised in Normandía, Huila, Nestor Lasso represents a new generation of Colombian producers. With support from Cata Exports and training from SENA, Colombia's national training service, he has refined his skills in coffee processing and sensory analysis, combining technical expertise with an unwavering passion for quality.

Describing this coffee as simply "advanced washed" hardly does it justice. After meticulous hand-picking, only the ripest cherries are selected before undergoing a carefully controlled series of fermentation stages. An initial oxidation period is followed by anaerobic fermentation and a final fermentation using must from previous batches, building remarkable clarity, sweetness and complexity. The coffee is then mechanically dried at temperatures below 38°C, ensuring an even, controlled drying process that preserves the vibrant character developed throughout processing.
