The natural process is common in this region of Tanzania. Coffee cherries are hand-harvested on smallholdings of 1-2 hectares before being dried on raised beds. The slow fermentation of the drying fruit transfers a unique and complex fruit flavour to the coffee seeds within.

 

Expect high sweetness with notes of raspberry, macadamia and an intensely floral aroma.

In northern Tanzania’s Mara region, near the Kenyan border, lies Tarime, where smallholder farmers cultivate 1–2 acre plots intercropped with cash and food crops. After regulatory challenges in 2017–2019 caused many to abandon coffee, a 2020 revitalization effort improved practices, facilities, and farmer premiums, bringing producers back.

Though Tanzania is known for washed coffees, Tarime specializes in naturals. Hand-harvested and slowly processed, these lots develop rich sugars and acids, producing a complex, fruit-forward cup.
