Paola Trujillo is a dedicated and passionate coffee producer, working on her family’s farm, Patio Bonito. This lot is anaerobically fermented, allowing the sugars, organic acids, and other compounds within the cherries to break down gradually.

 

This process helps develop a delicate, crisp, and lively character. After pulping and washing, the beans undergo a second fermentation for 18 hours before being dried on raised beds.

Paola Trujillo is a young, dedicated coffee grower from Colombia’s Cauca region. On her family’s 11-hectare farm, Patio Bonito in Pescador, the Trujillo family cultivates some of the industry’s most sought-after varieties, including Gesha, Typica, Wush Wush, Aji, and SL28.

Given the chance by her father to join the family coffee project, Paola was instantly hooked. After studying chemical engineering, she returned home to focus on improving quality and processing across both pre- and post-harvest stages. With the whole family involved, Patio Bonito has become a highly regarded and increasingly recognised farm in the region.

Inspired by her mother Maria Angela’s belief in sharing knowledge, Paola now offers courses and training for young people, helping grow both the family’s legacy and the future of the farm. For this coffee, Paola chose Typica—one of the world’s most historically significant and genetically important cultivars. Originating in Ethiopia, Typica has shaped the global coffee industry and is prized for its clean, sweet, and complex cup profile.

Paola and her team handpick only the ripest cherries, then sort and float them to remove defects. A 22-hour anaerobic fermentation enhances flavour, allowing sugars and organic acids to break down slowly for a delicate, crisp character. After pulping and washing, the beans undergo an 18-hour second fermentation before drying on raised beds, carefully monitored to reach 9.5–11% moisture for optimal quality.
