Nestled in the heart of Quindío, Colombia, Jairo Arcila carries the proud legacy of being a third-generation coffee grower. After decades as Mill Manager for Colombia’s second largest coffee exporter, he retired in 2019 and, with the support of his sons Carlos and Felipe, immersed himself in elevating the quality and character of his own coffee. Under their guidance, he adopted advanced picking, sorting, and processing techniques while cultivating exotic varieties such as Pink Bourbon, Java, Papayo, Gesha, and the prize-winning Chiroso—a naturally occurring mutation from Antioquia later genetically linked to Ethiopia’s landrace coffees.

Jairo and his team harvest only the ripest cherries, hand sorting and floating them to remove defects while recycling and naturally filtering the water used in processing. For this lot, the cherries undergo a 45-hour aerobic fermentation to enhance complexity, then dry on raised beds for 8–12 days, allowing sugars and flavours to concentrate. The meticulous care from start to finish—combining traditional methods with precise fermentation—results in a coffee that is both unique and deeply expressive.
