A co-fermented coffee from one speciality coffee’s most pioneering farms! El Placer is one of the most progressive and experimental farms in Colombia, and this particular lot showcases their fermentation skills.

 

The ripe coffee cherries are placed in drums for 72 hours alongside strawberries. The two fruits ferment together, and the coffee takes on a vibrant, heavily aromatic profile that transforms the final cup of coffee into something truly exceptional.

This exceptional coffee comes from the renowned El Placer farm in Génova, Quindío, Colombia. Sebastian Ramirez, a fourth-generation coffee producer, transformed his family’s century-old business by focusing on quality, education, and direct trade. After studying coffee tasting and processing at Sena, he elevated El Placer’s offerings, supported local farmers, and gained international recognition for producing outstanding coffees.

The coffee’s journey begins with meticulous hand-picking across neighbouring farms, selecting 95% ripe and 5% semi-ripe cherries. These are fermented with strawberries for 72 hours in anaerobic conditions, enhancing flavour complexity before being slowly dried for 15 days under controlled temperature and humidity. After stabilising in grain pro bags, the beans are carefully selected and packaged for export. Though strawberries are removed before drying, their influence lingers in the cup — delivering complex, juicy acidity with notes of cherry and pomegranate, a silky body, and lasting sweetness with floral delicacy.
