The farm produces some very interesting naturals, anaerobic and honey processed coffees, with one of the more unusual methods being this 80hr natural fermentation using the famed gesha varietal. The coffee is harvested and then fermented as whole cherry for 80 hours in barrels at the nearby town of Garzon. The coffee is then dried as whole cherry on raised beds or small patios.
The landscape of Huila lends itself well to high quality coffee production. The looming Andes mountain ranges provide high elevation, volcanic soils and rich biodiversity. Around one quarter of the farm is preserved as native forest, and the farming of subsistence crops is encouraged.

Some tasting notes are a guide but the sherry trifle flavour is bang on for this one!
