Catimor (P3 / P4)

Dongka is the name given to a family farm and washing station in the Menglian country of Yunnan, Southern China. Here, they grow the Catimor coffee varietal, which grows well at relatively low altitudes (for speciality coffee). The plant also high-yielding and resistant to ‘coffee leaf-rust’ which has blighted many areas of the coffee growing world in recent years.

Whilst the processing of the coffee happens at the Dongka farm, the cherries are also sourced from neighbouring producers. The coffee is pulped (the skin and fruit pulp removed), and left to dry-ferment for 18 hours. The coffee is physically washed, by passing it through water channels, that also enables density sorting. The coffee is then spread thinly on drying patios for up to 10 days. This enables the coffee to reach the optimum moisture content for shipment.
