Izuba translates as ‘sun’ in Kirundi, the national language of Burundi. The anoxic processing of this lot refers to the anoxic environment that is created for the whole coffee cherries post-harvest.

 

The fruit is left for up to 72 hours in this state before the cherry pulp is removed. This process happens in the country of origin before the coffee is shipped to RAVE. This method results in a particularly complex cup profile and makes for a zingy and fruity light roasted coffee.

Izuba, meaning “sun” in Kirundi, is a washing station in Runinya, Kayanza Province, managed by Ntama Appolinaire with support from Prosper Merrimee and 250 seasonal workers. Nestled near Kibira National Park, the area’s ideal climate and soil support coffee from three nearby hills—Kigeri, Ryamukona, and Mugoyi—known for producing bright, sweet coffee.

In its anoxic process, ripe cherries are sealed in tanks under a layer of cool water, creating a vacuum and controlling fermentation for up to 72 hours. Afterward, the cherries are pulped, washed, and dried on raised beds for up to 20 days.

This simple yet effective method shows that innovative coffee processing doesn’t need to be costly—just a tank, plastic sheeting, and clean water.
