    FARM NOTES:

    This coffee is sweet, nutty, and has a subtle baked fruit note; making it the perfect early-morning brew or base for an espresso drink.

    It is shade-grown and benefits from a 6-month dry period which allows the natural fruit sugars to develop, giving this coffee its easy-to-love versatility.

    FARM NOTES:

    Kilimbi is actually the name of the washing station where the coffees are processed. The cherries themselves are grown by local smallholders, and delivered to the station for pulping and drying. For the honey processing, the cherry skins are removed, leaving most of the fruit mucilage in tact - this undergoes a series of under water fermenatations, as well as ceremonal foot-stomping! The coffee, which at this stage almost orange in colour, is then dried in the full midday sun to manage the risk of over-fermentation and taste defects. The drying process takes around 35 days to achieve a 10-12% moisture content.  

    Natural sweetness, lightly floral with great depth of flavour. A Medium Roast that works well as a filter brew but can also cut it with shorter milk-based drinks. If you are a newcomer to African coffee or a long term drinker this is a shining example of everything they offer. 

    Kilimbi was one of the first washing Stations in Rwanda to be granted approval to produce natural and honey processed coffees. The high altitude of the washing station allows for good sun exposure and cool breezes for consistent drying.
