    FARM NOTES:

Costa Rica is renowned for producing exceptional quality coffees. It is common for small scale producers to deliver picked cherry to their local mill - in this case the Cerro Dragon wet mill, run by Fernando Prado. The mill uses a centrifuge to both wash and de-pulp the coffee, therefore using less water than the traditional washed process. Costa Rican cofee production is generally more environmentally conscious and considers land husbandry paramount. The country uses 93% renewable energy, and producers are encouraged to use as little water as possible in their coffee production.

The focus on coffee has been further developed in recent years with the building of both dry and wet mills that are also used to process coffees from neighbouring farms.
