FARM NOTES:
Popayán is named after the capital city of the region in which it is grown. The Cauca region is in the South West part of the country and is home to many quality coffee farms, as well as many other crops such as sugar cane, maize, fruit and nuts.
The protection of the Andes mountain range, as well as its rich volcanic soils, provides the optimal conditions for coffee growing. Rainfall is plentiful and predictable, temperatures are cool and stable, and altitude is high. Arabica can be a temperamental coffee species, vulnerable to disease and low yields, but here the environment is perfect - and the results are worthwhile.
The 65 smallholders who contribute to this coffee reside in the Cauca region of Western Colombia. The region is a plateau that is sheltered by the Andes mountain range and makes for exceptional coffee growing conditions. We are big fans of Colombian coffees at Rave - they are balanced, versatile and this Popayán lot is well suited to darker roasting, resulting in full flavours that are perfect for espresso brewing and even for milk based drinks!

FARM NOTES:
The Mio estate is situated in the region of Monte Santo de Minas, around 300km north of Sao Paulo in SW Brazil. Here, the Pellicer family are committed to exceptional levels of traceability - down to the 6 individuals who picked this specific lot from the estate!
This year Mio have been studying their carbon footprint and calculating the impact of their emissions, relating to use of fuel, fertiliser and soil liming. In contrast are the calculated figures for removal of carbon from the atmosphere, relating to coffee tree biomass and soil carbon sequestration. The result is that for every kilo of green (unroasted) beans, Mio offsets all of their carbon emissions and removes an additional 4.68kgs!
This honey processed coffee from the Mio Estate in Brazil is a presentation of both classic regional flavours of sweet cocoa and almond, and a more refined, brighter fruit note. The attention to detail in the processing, as well as careful hand harvesting (not so common in Brazil), has elevated this coffee to new heights. With a medium roast level applied, you can rely on this coffee to deliver balanced flavour and vibrant complexity.
