Daniel Monge, the producer, and his family have partnered with the pioneering Roble Negro mill in order to best process and package the coffee - enhancing the quality of the final cup.

Red Catuai

Daniel Monge is a third generation coffee farmer at Las Palomas. He inherited the farm from his father Jorge who purchased the farm in the early 90s. He cultivates the red and yellow catuai varietals, but has recently also begun experimenting with gesha and villa sarchi varietals too.
The coffee cherries are delivered to the Roble Negro Mill. The mill has invested heavily in machinery and technology to best process natural, honey and washed coffees. The mill also aims to reduce water usage, electricity and waste in order to operate as sustainably as possible. For example, they make natural fertilizers using discarded coffee cherry.
