Small scale farmers in Mexico typically combine their coffees as part of larger regional lots, and therefore dilute the individuality of flavour present at farm level. The selection of Leonide's coffee showcases just how exceptional Mexican coffee can be. As a producing country it is often overlooked - it is futher from the equator and has lower average altitudes then many better known coffee regions - but speciality producers are starting to challenge these assumptions. Leonide rests his freshly picked coffee cherries over night, before pulping and fermenting for up to 60 hours! Following fermentation, the coffee is dried on traditional petate mats.
