This natural processed coffee uses only exceptionally sweet coffee cherries. The result is sweet florals and lots of red fruit flavour, think strawberry or raspberry.

The high altitude here allows for the slow ripening of the coffee cherries, and protection from natural pests. The acidity is pronounced, but balanced and has a citric floral note. Four generations of coffee farmer have steadily improved quality to the point where there are 7 different processing methods in use!

The Solano family's Great Grandfather began producing crops on the farm that included corn, beans and coffee. His son purchased additional farmland and increased coffee plantations. This coffee was sold to middle men and processed only as 'fully washed' coffee, with very little traceability. His son, studied agronomy with a focus on coffee and increased quality up to and beyond 85 points (speciality coffee is considered to be 82+). The coffee was also sold as individual lots under the farm's name. The fourth generation are now pioneering new and experimental processing. There are currently 7 different processing methods in use on the farm, and they are all sold individually to highlight the nuances of each. This particular 'natural' lot is comprised of cherry picked at 22% Brix (a measurement of sugars), and dried on raised beds inside a greenhouse.
