Costa Rica is renowned for producing exceptional quality coffees. It is common for small scale producers to deliver picked cherry to their local mill - in this case the Cerro Dragon wet mill, run by Fernando Prado. The mill uses a centrifuge to both wash and de-pulp the coffee, therefore using less water than the traditional washed process. Costa Rican cofee production is generally more environmentally conscious and considers land husbandry paramount. The country uses 93% renewable energy, and producers are encouraged to use as little water as possible in their coffee production.

We've worked with a new exporter this year in Costa Rica, and they have enabled us to access some new coffees and begin some new producer relationships. I'm very happy with the quality, and as Costa Rican coffees go, the price is still very accessible.
