This coffee is collected from 3 farms that reside in the region surrounding the capital, Bogotá. Santa Rosa, El Refugio and El Respaldo produce coffee using the traditional washed method, with varying lengths of wet fermentation to encourage complex flavour development.

 

This coffee is roasted to enhance these qualities with sweet red cherry, date and a malted milk chocolate finish.

The heart of this coffee is not only the three producing farms that grow the coffee cherries, but also an individual - Sr Joseel. Joseel is a third generation coffee ‘collector’ who assists in transporting the coffee from the farms to a centralised mill in Bogotá. Getting fresh coffee to the mill in a timely manner can be make or break for the quality of the final cup.

The coffees are processed in the traditional washed method and are pulped, washed and dried either on the farm or at the mill. This flexibility allows for both Joseel and the producers to analyse space, timings, temperature and humidity in order to produce the highest quality, clean coffee possible.

Each producer of the Viani coffee is part of the wider Racafé CRECER programme - which pays a premium to producers for taking care of their farms for the future. They manage soil health, biodiversity and the natural water sources, as well as many other social, environmental and financial criteria.
