We've worked on and off with Daterra for years; their quality is outstanding and their sustainable credentials are off the chart.  When most people think of Brazil the words "Chocolate" and "Nut" usually come to mind, but Daterra are looking to challenge that through their 'Masterpieces' and 'Collection' series.  Here we have coffees that will surprise you with fruity floral notes traditionally associated with other origins.

This is our second release from them this year, bought from a fiercely bid auction where the highest price paid was $51/lb or approximately £86/Kg for a Semi Carbonic Macerated Natural Geisha.

Our lot, the Curupira, is also processed using Semi Carbonic Maceration and is a varietal called Acaua,  the result of breeding between Mundo Novo (IAC 388-17) and Sarchimor (IAC 1668).  We have 55kg available until the new auction and will be selling by pre-order only.

The Legend of Curupira
Curupira is a creature of forests - a boy with long red hair and backwards feet. With his cousin Caipora, he protects the forests of greedy hunters who do not respect nature. The Curupira whistles loudly to frighten and confuse his victims, until they go mad or get lost inside the forest. Their backward-facing feet mislead the hunters: if they try to follow him, they end up in the wrong direction. To protect themselves from the Curupira, hunters leave presents in the forests to please or distract the boy and travel safely

20g in, 365g Hot water (95-97 degrees)
65g bloom for 30 seconds, light agitation to ensure saturation.
100g spiral pours every 30 seconds up to the 365g total
All water out in 3-3:30 minutes

65g Coffee

1L water at 95C

Steep for 4 minutes, stir and then let rest for another 4-5 minutes.

Rest mesh on top of coffee and gently pour into a preheated mug of choice.
