This power-house coffee is produced by one of the biggest names in processing - Sebastian Ramirez. At his farm in Quindío he is pushing the boundaries of fermentation and flavour refinement.

 

This honey-processed gesha is highly accoladed and sought after by roasters and brewers around the world. Ramirez combines a distinctive varietal together with stringent scientific methods to produce a coffee like no other.

Sebastian Ramirez is a fourth-generation coffee producer whose family farm, El Placer, is located in Quindío, Colombia’s coffee-growing axis. Before he took over, the coffee was sold locally at volatile prices that seldom reflected its quality, often leaving the family unrewarded for their labour. Seeking to change this, Sebastian studied with Sena, Colombia’s National Learning Service, to deepen his technical knowledge and explore new markets. By connecting directly with roasters and buyers through conversations about taste and flavour, he built a loyal following willing to pay fairly for El Placer’s exceptional coffees.

This approach has elevated El Placer and the Ramirez name to the top of speciality coffee roasters’ wish lists, with their coffees frequently featured in national and international competitions such as the Brewer’s Cup, WBC, and UK CIGS. The ‘white honey’ process used for their gesha variety involves careful control of fermentation and drying: 95% fully ripe and 5% semi-ripe cherries undergo multiple fermentation stages—both anaerobic and submerged—before drying under precise conditions for around 25 days. The result is a coffee that showcases both technical mastery and the distinctive character of El Placer.
