La Candelilla was one of the first independent mills created back in 2000. They used to deliver their cherries to the huge neighbour Coope Tarrazu mill but decided in 1998 (in the middle of the coffee crisis) to add value to their product taking control of the process. The farms and mill are run by 7 siblings covering 70ha of planted coffee in total.
Light to Medium
We prefer this roasted fast and fairly light, with a development time of roughly 1:30 on a nine minute roast. However it can be taken further and sweetness and complexity accentuated with a 10-11 minute roast and longer development time.
