  • Grown: Gedeb, Yirgacheffe

    Altitude: 1,900-2,100m

    Varietals: Kurume, an indigenous Ethiopian varietal, smaller in size than other typica/heirloom beans but very sweet in the cup, also very aromatic 

    Mill: Gedeb Washing Station

    Producers: 800 Smallholders (2 hectare average)

    Soil: Red Brown, over 1m depth

    Processing

    Ripe cherries are delivered to the mill, where they are graded and then placed onto raised drying beds in thin layers and turned every 2-3 hours in the first few days to avoid over-fermentation and mould growth. Four to six weeks later, depending on weather and temperature, the beans are dehulled. The beans are then transported to Addis in parchment, then milled prior to shipping. These lots are sold through the ECX (Ethiopian Commodity Exchange) system, where this was classified by the ECX Central Liquoring Unit as a Grade 1 coffee.
