Villamaria is a drying station that represents 30 coffee producing families. Our import partners, Raw Material, founded the relationship in order to support more farmers in gaining access to the speciality market. And in turn providing a more stable and reliable source of income for local communities. The mill sits at a lower altitude than the farms themselves, in order to ensure warmer drying temperatures and a more consistent quality of coffee. Recent changes in climate have increased the need for more sophisticated drying technologies as the wet season has become unpredictable - which can be catastrophic to coffee producers.

1000g water at 94C
Wait for 4 minutes, then stir the crust and replace lid.
4 minutes later decant into pre-warmed cups
